If you're looking for something sweet to bake for this Valentine's Day (or any day you're breathing) without having to work too hard, here is one of our family's favorite recipes!  We of course, are partial to using the cameo for this recipe oldie. :)

Apple Dumplings Recipe

INGREDIENTS

Dough:

2 cups Bisquick mix and ½ cup milk

Sprinkle mix:

½ granulated (white) sugar

¾ tsp cinnamon

Sauce:

1 ½ cup brown sugar

1 cup white sugar

2 cups water

6 T. butter

If using the larger apples, just peel and cut them in half rather than coring them and using them whole.  You’ll need to make your dough with Jiffy Mix or Bisquick.  Two cups of mix and ½ cup milk.  The number of apples you use will determine how much dough you mix up.  I’d start with just one batch.  Roll dough out on a lightly floured board.  Roll to about 1/16 inch thickness.  It will rise enough as you work with it and as it bakes.  Meanwhile, mix ½ cup of granulated sugar with ¾ tsp. cinnamon.  While you are making the dumplings, mix together 1 ½ cups brown sugar with 1 cup white sugar, 2 cups water and 6 T. butter and cook in a sauce pan on low heat.  This is enough sauce for about 9 whole apples.

After the dough is rolled out, place a whole peeled and cored apple on about a 4” square of dough.  It doesn’t have to be perfect because you will be shaping of dough. It doesn’t have to be perfect because you will be shaping it up around the apple.  Place the apple on the dough and measure 1 tsp. of the cinnamon/sugar mixture into the center of the apple.  Add a little piece of butter/margarine and ¼ tsp. lemon juice.  Carefully pull up the dough around the apple and place in a baking dish.  When all of your apples are wrapped, pour the sauce over the apples.  The sauce will come up around the apples at least half way.

Bake at 350 degrees F. for at least 1 hour.  Slip a knife into an apple to test the done-ness, and if the dough wrap is lightly brown. Enjoy with a touch of ice cream or pour fresh cream over to serve.  Reheat or serve cold.  We prefer to zap them individually in the microwave for 12-15 seconds.
